Homemade pancakes are extremely easy, simple and fast to prepare.
I don't know you, but I've grown up with pancakes. I mean, during the communism regime, sweets were extremely rare to find in shops. In my village shops, at least.
In cities things were different. But that's a different story, that you can read in my memoirs if you're interested.

When I say pancakes, I mean crepes. Like French or Italian style - thin - not thick like the American ones.
However, I prefer thicker ones.
Anyway, long story short, pancakes were one of our favourite sweets, that we make even 3 times a week.
They were a desert, not a breakfast though.
The filling we loved most was one you've probably never considered for your pancakes: cows cheese. Fresh cheese - like ricotta - with sugar, sultanas and vanilla essence.
As you can see, all the pancakes are served with fresh fruits. I do my best to make every breakfast as a fun thing as possible.
