Homemade pancakes - Nutella or jam filling

Homemade pancakes are extremely easy, simple and fast to prepare.

I don't know you, but I've grown up with pancakes. I mean, during the communism regime, sweets were extremely rare to find in shops. In my village shops, at least. 
In cities things were different. But that's a different story, that you can read in my memoirs if you're interested.

When I say pancakes, I mean crepes. Like French or Italian style - thin - not thick like the American ones. 
However, I prefer thicker ones. 


Anyway, long story short, pancakes were one of our favourite sweets, that we make even 3 times a week. 
They were a desert, not a breakfast though. 
The filling we loved most was one you've probably never considered for your pancakes: cows cheese. Fresh cheese - like ricotta - with sugar, sultanas and vanilla essence.

We had fresh cheese, yoghurt and cream every day because we made all of these. So it was easy and cheap for us. The story changed completely for other families. Buying the cheese would just made these pancakes an expensive dessert.

As you can see, all the pancakes are served with fresh fruits. I do my best to make every breakfast as a fun thing as possible.

But, sometimes, the smileys are... monstrous-looking. 😂
